I am exceptionally pleased with this cookbook. It is full of healthy, protein-rich, filling meals that are beautiful to look at and suitable for quick cooking with only a tea kettle, microwave, and toaster. You can even do without the toaster, if necessary, because it’s only used for the few sandwiches that are included. It’s possible to save a lot of money by not always eating out at work, or to expand your repertoire of packed lunches with some very protein-rich and filling choices.There are many recipes here for breakfasts, snacks, light lunches, filling lunches, sweet treats, and drinks. The author uses fresh ingredients plus some grains, various types of noodles, pasta, and occasionally some meats such as parma ham or prosciutto, chicken, salmon, or eggs. The recipes are clearly laid out, and each one states how much time is required, either 5 or 10 minutes. The times are accurate too. So you can have a Burrito Bowl with Chicken, Feta, and Sweet Corn in under 10 minutes, including poaching the chicken. I tried the Fruity Kale Salad and loved it, and I don’t even normally eat kale. There are beautiful color photos of every meal, and the author has given much attention to making the food colorful and inviting to look at as well as tasty and nutrient-rich.I would recommend this book to cooks for use at home as well as at the office. Any of the salads would make a lovely summer meal if you add a piece of meat from the barbeque, for example. They are certainly company-worthy too. I will also use this book when I’m on vacation, when I don’t have access to a stove. It is truly an inspiring cookbook.
